Cognac happens:
• young - up to 3 years old;
• old - 3 to 10 years;
• BC (selected old) - 4 to 10 years;
• VSOP (very old) - 4 to 20 years old;
• XO (extra old) - 6 to 50 years old.

The longer the brandy spirit is aged in oak barrels, the more intense and complex its flavor becomes.

Another criterion is the region of production.
The main regions of Cognac production are Cognac (Cognac) and Bouguenay (both in France), each with its own production and unique drink characteristics.

What strengths are cognacs produced?

Main stages of cognac production

Cognac production is a complex and carefully controlled process that involves several stages:

Stage one is winemaking.
White grapes are used to make wine, which is then subjected to a distillation process.

The second step is distillation.
The wine is distilled twice in special copper cubes (alambics), resulting in brandy alcohol.

Stage three is endurance.
Cognac spirit is poured into oak barrels and stored for a certain period of time, which can vary from three to fifty years. It is during this process that the spirit acquires its unique flavors.

The fourth step is mixing (assemblage).
Cognac spirits, from different grape varieties and different aging periods, are blended together to create something new and unique. This is done by a blending specialist, or Maitre de Chaille, who has the task of keeping the flavor of the drink consistent from bottle to bottle.

Each step requires in-depth knowledge and skill.

Methods of making cognac

There are several ways of making this noble beverage, each of which gives cognac its unique flavor and aroma.

The main method is double distillation of wine materials.
First the grape juice is fermented and turned into wine. The wine is then heated and undergoes a first distillation in special copper cubes - alambics, after which it is distilled a second time.
The resulting brandy spirit is poured into oak barrels and aged from three to fifty years (in some cases up to 100 years). This process gives the final product its characteristic tartness, thickness, oiliness, balsamicity, intense aroma and flavor.

Another method is to mix brandy spirits of different ages (assemblage).
Spirits of different ages are blended by master brandy houses to create a new blend perfect for drinking.

Regardless of the method of production, cognac is always characterized by high quality and refined taste. It is not just an alcoholic beverage, but a real work of art, which is highly appreciated by lovers of strong alcohol all over the world.

Which country produces the best cognacs?

Cognac is one of the most prestigious alcoholic beverages in the world. The French region of Cognac has the most unique conditions for growing grapes and producing this noble beverage.
Real French cognac is famous for its rich taste, aroma and high quality. The main reasons for this are careful selection of grape varieties, exceptional climatic conditions and long aging of cognac spirits in oak barrels.
Today, the best experts believe that no other country can compete with the French masters in this art. It is in the Cognac region that all the elite of the world's cognac industry is concentrated - famous wine houses and factories that have been producing the most exquisite samples of this divine drink for decades.
However, you can taste them only directly in France, as in Russia the store shelves are filled with expensive bottles, which, I believe, have nothing to do with French cognacs, and are bottled at best at our cognac factories by enterprising Russians. And if French cognac products are imported into our country, they are of low quality and are sold as first-class goods.

Most of us should pay attention to Armenian, Georgian and Dagestani brandy producers.
